Is the built-in dictation enough?

For most people, yes. It's fast, works in every app, adds punctuation automatically, and on recent iPhones lets you say "change Monday to Tuesday". See all iPhone dictation commands. The paid apps mainly help if you want rambling cleaned up automatically, or the same custom dictionary on your phone and computer.
